Here's how to create a stop motion animation in QuickTime Player. First, place all the images into their own folder. QuickTime expects the images to be numbered. If your images are not pre-numbered, you can use this applescript to do that for you.
Once you have all the images arranged properly, open up QuickTime Player and hit Cmd-Shift-O or go to the File menu and select "Open File Sequence…" In the dialog that appears, select one of your images.
Finally, you will be asked to select how many frames per second you want. Select one of the options and hit OK. QuickTime will put together your stop motion animation which you can then save or export.
Using this feature in QuickTime Player is only for registered users of the Pro version. However, if you still want to use it, I have written an AppleScript to turn a folder full of numbered images into a stop motion movie. Just run the script, follow the prompts and, eventually, a stop motion video will be placed in the same folder as your images.
